Easy Bistro & Bar Opens / Re-Launches

easy-bistro-bar.jpg April and I were fortunate enough to obtain tickets to the Easy Bistro & Bar reopening last (Tue) night. With the combination of good people, great interiors, a great new brand, and excellent (and free) food it was an evening guaranteed to please. I'm happy to say expectations were exceeded.

Easy Bistro & Bar used to be Easy Seafood. Executive Chef & Owner Erik "Easy" Niel wanted to evolve the restaurant away from being tourist focused and towards becoming Chattanooga eatery of note. I'm happy to say he pulled it off, and that it's great to have (not that we're anything other than the staunches of fans) an alternative to The Meeting Place for an upscale (but not at St. John's price point) dining experience.

The new brand was done by Widgets & Stone, and you really have to see it in implementation on the menus and napkin wrappers etc. It complements and reinforces the fantastic new interiors of the restaurant, which were designed by Amanda Niel, Erik's wife. Seriously. The restaurant is downright gorgeous. Take note of the tile floor design at the entrance.

The booths in the bar are personally my favorite gesture, providing comfortable yet somewhat private seating with a great view of the restaurant & bar for people watching purposes.

As for the food: nearly perfect, certainly exceeding what we'd anticipated for an opening night with all its pratfalls as a kitchen works out its process & rhythm. I had: heirloom tomato salad (fantastic, though slightly heavy on the onions), wild salmon (perfect), and the warm chocolate cake (which was less than warm as our server was overwhelmed, but still great).

cool. we liked it as its previous incarnation too, so we'll have to check it out. one thing: is it still really really loud inside? I remember an echo chamber. outside was nice tho.
